How We Began

WisePoint Quest started in 2014 when two chefs with decades of combined restaurant experience decided to step away from the intensity of commercial kitchens. We loved cooking, but we wanted to share that passion in a more meaningful way than plating hundreds of dishes each night.

What surprised us most when we started teaching was how many capable, intelligent people felt intimidated by their own kitchens. They'd watch cooking shows, buy expensive equipment, yet still relied on the same handful of safe recipes week after week. The problem wasn't ability—it was confidence and understanding.

We realised that traditional cooking classes often focused on following recipes rather than building fundamental skills. Students would successfully complete a dish during class, then struggle to recreate it at home or adapt it to their own preferences. We wanted to change that.

What Drives Us

Skill Over Spectacle

We're more interested in helping you master a perfect omelette than teaching you to create elaborate presentations. Solid fundamentals unlock far more potential than flashy techniques.

Understanding Over Memorisation

When you know why onions caramelise or how gluten develops, you can troubleshoot problems and adapt recipes with confidence. We teach the reasoning, not just the steps.

Patience and Encouragement

Learning happens at different paces. We never rush anyone, and we celebrate progress no matter how small. Every chef started as a beginner.

Practical Solutions

Not everyone has a sous vide machine or a marble pastry slab. We focus on techniques that work in real home kitchens with everyday equipment.

If something didn't work, we talk about why and how to fix it. Mistakes are valuable learning opportunities, not failures.

We're still learning ourselves. Cooking traditions evolve, ingredients change, and there's always a new technique to explore. We bring that curiosity to our teaching.

We've worked in Michelin-starred restaurants, neighbourhood bistros, catering companies, and food journalism. This breadth of experience means we can guide you whether you're interested in classical French technique or modern plant-based cooking.

Fifteen years in professional kitchens including three years as sous chef at a two-Michelin-star restaurant in London. Specialises in French and Chinese cuisine, with a focus on sauce work and flavour development.

Michael O'Brien

Senior Instructor & Co-Founder

Trained in Dublin and Paris before spending a decade working across Europe. Particularly passionate about bread baking, butchery, and teaching knife skills. Known for making complex techniques approachable.

Instructor & Workshop Coordinator

Background in vegetarian and vegan cuisine with extensive knowledge of spices and plant-based cooking. Previously worked as a food writer before joining WisePoint Quest to focus on hands-on teaching.

2014

Foundation

Sarah and Michael leave restaurant careers to launch WisePoint Quest with a focus on one-to-one culinary coaching.

Workshop Programme Launch

Introduce group workshops based on client demand. First seasonal cooking series fully books within three days.

2018

Team Expansion

Our Teaching Philosophy

We've noticed that many cooking classes follow a demonstration format: watch the instructor, then replicate what they did. While this works for some people, it doesn't help you understand what to do when something goes wrong or how to adapt techniques to different ingredients.

Our approach is different. We guide rather than demonstrate. You do the cooking while we explain what's happening and why. When you're reducing a sauce, we help you recognise the visual and textural cues that tell you it's ready. When you're searing meat, we teach you to listen to the sound of the pan and feel the resistance when you try to lift the protein.

This method takes longer initially, but the results are transformative. Our students don't just learn recipes—they develop intuition. They become comfortable improvising, substituting ingredients, and adjusting techniques based on what they observe. That's the difference between following instructions and actually knowing how to cook.
